EYE, EDHEC’s incubator, gave as a work space and access to experts who challenged us in constructive ways to helped us refine our idea,” EDHEC entrepreneurs, co-founders of Canard Street. 

Co-founders Nicolas Drouault (EDHEC Master in Management, 2016) and Grégoire de Scorbiac (EDHEC MSc in Entrepreneurship and Innovation, 2016) are big fans of duck meat and street food. After working in business development abroad, they decided to create a new restaurant concept combining their passions. Inside EYE, EDHEC’s incubator, they benefited from a work space and experts “who challenged us in constructive ways to helped us refine our idea,” noted Grégoire de Scorbiac.

Canard Street opened in Lille in September 2016, serving up duck burgers, tartar and fritters for around €12 a plate. Classics like confit and foie gras are also available at the counter, for takeaway or delivery. The aim is to “modernize and make more accessible a food that is traditionally regarded in France as noble and expensive,” explained Grégoire de Scorbiac, adding: “Our vision from the start was to turn this into a global franchise.” With their former EDHEC mentor now on board as an investor, these young men are getting their ducks in a row for expansion.

A second location is already in the works, with plans to spread across France and abroad. In 2018, Canard Street, approching €1M revenue per year and more than 10 employees, will open 2 restaurants in Paris.
